My landlady, who is Mexican, often brings me food. I really need to bring her something one of these days. Anyway, the other day she showed up with mashed potato tacos with homemade salsa. Wow. She filled a crisp taco with mashed potatoes, cheese, tomato, etc, and had a killer habanero pepper salsa to go with it. It was shockingly good. She said she got the idea when visiting relatives in Cabo. Fusion food at its most comforting.
It reminded me of 2005 when we were in Hawaii for my 50th birthday. We went to the restaurant at the top of the Ilikai hotel (the one that featured Jack Lord standing on the balcony during opening credits of the old Hawaii 5-0). I ordered a ravioli filled with mashed potatoes and it was fascinating. Three days later I was still thinking about it. More the unique texture than the flavor.
Apparently it is no holds barred on mashed potatoes. Keep those leftovers; tomorrow is taco night! I am just sorry I don't have a picture.
