Solstice Rice and Sweet Potatoes

These days I am more about solstice than Christmas. It is too dark for me! I can see how this time got to be a festival time. Rage against the darkness!

My garden was at hand to raise my spirits once again. I used my fresh sweet potatoes, peas, lettuce, spinach, mint, dill and cilantro to cobble together a dinner. I decided to add the taters and peas to rice along with some curry. Had I had it on hand I might have added some coconut milk and fresh ginger too. I put it all in the rice cooker and waited. The rest went into a salad.

As long as I had my garden I could almost be a vegetarian. Such fun and so many choices and the thrill (cheap thrills, granted) of eating with the seasons.

The final product. I made enough for 18 people so good thing it was tasty - I will be eating it all week.
