Microwave Fun

I found a great recipe for a 2 serving chocolate microwave cake. The perfect foil for an almost all vegetable, part pasta and rice diet. I found it online and fixed it. It is much fluffier and lighter than the original recipe.

The whole thing is cooked in the 1 cup measuring cup. See below.

In the cup put:
4T sugar
4T flour
2T cocoa
1/2 tsp baking powder
Mix together well

In the bowl put:
1 egg

3T oil

3T milk
1/2 tsp vanilla

Beat together and add to dry ingredients.
Mix until just moistened and add:
3 T semi-sweet chocolate chips
Mix lightly.

Cook in microwave for 3 minutes for 1000 watt oven.
I have to cook mine for 3 minutes and 45 seconds.



Let cool. Cut in half and frost if desired.
