Another Garden Recipe


California-Greek Salad


This was so good I had to share. My main goal was to use my tomato, avocado and fresh herbs:

Serves 1 as main dish:

1 tomato, cut into bite sized pieces
1 small avocado, sliced into 12ths (6 pieces of each half)
Dill - a teaspoon-T?
Basil - 1 large leaf
Mint - 2 leaves
Parsley - 1 tsp or so
(use scissor to hold herbs over salad and cut into small pieces)
Nasturtium leaves - 2 small (optional)
Feta cheese, crumbled - 2-4 T
1T olive oil
1 tsp or less vinegar (lemon juice would be even better)

I cut up equal parts of tomato and avocado into largish chunks. Then using scissors added the herbs. I was hesitant about the mint but it was DELICIOUS. Lemon juice would make a great substitute for the vinegar but I didn't have any on hand.

Cucumber would also be excellent in this salad although it was perfect as prepared.

I think you should plant an avocado tree next...we can plant them here but its hard for them.

Looks fabulous- even though I'm not a fan of feta- the rest is right up my alley.
